Development and Aging
After the harvest and manual selection in each of the vineyards, the grapes arrive at the winery for cold maceration.
Fermentation is below 25 degrees to preserve freshness and is done separately for each variety before assembly.
Curiosities
All the varieties are from their own vineyards, each located in an area of Rioja and are a clear reflection of the different terroirs, which provide each variety with a characteristic profile for the blend of this Burgundian-style crianza.
A part of Tempranillo is from the coolest area of Mendavia, in Rioja Oriental
The other Tempranillo is from the old Cenicero vineyards, in Rioja Alta, a privileged area protected by the Sierra de Cantabria, with an Atlantic influence.
The Garnacha is from Arenzana, from some old vineyards in the Alto Najerilla area, the best area in Rioja for growing fresh and mineral Garnachas.
