Tasting Note:

Elaboration and aging: It is elaborated with the grapes of the estate vine Coqueta with vines of about 40 years of age, which by its proximity to the winery has always enjoyed a privileged attention. Made from 90% Tempranillo, 5% Graciano, 5% Viura and Malvasia grapes, it is aged for 24 months in new French (80%) and American (20%) oak barrels, plus 2 years in the bottle before being released on the market.

Harvesting is done manually, in 12 kg boxes. The grapes are kept at a controlled temperature of 4-6 degrees for 24 hours in a cold room.
The grapes are selected and the shoulders are separated from the tips.
For the elaboration of this wine, the shoulders are used, the highest part of the cluster and therefore the ripest due to its exposure to the sun.
Fermentation takes place in small stainless steel tanks and French oak vats. The malolactic fermentation is carried out in new barrels.
