CATA's notes:
- Color: Very light and bright, mainly orange-pale salmon. In this harvest they return the acid fruits, very fresh, that dominate all the organoleptic profile of the wine
- Nose: A complex aroma of white and bone fruits; in post-taste the olfactory notes are transformed into something finer and more complex where we discover, in addition to the previous ones, aromas of lychee, apricot and delicate memories of pastry.
- Mouth: Extremely atractivp since, in spite of the fact that they still dominate the acid fruits, their whole is softened by some elegant and well integrated fine lines. It is a long wine in route that combines sucrosity, freshness and acidity.
Elaboration and aging: After 12 hours of maceration, the wine ferments for 15-20 days in small wooden deposits between 16-18ºC. For 3 months we maintain and work fine lines that will enhance and enhance their organoleptic virtues. Later we stabilize in cold and it is filtered and bottled.
