Tasting note
View: Color cherry red bright and clean.
Nose: powerful and complex with good intensity, initial liquor point that after airing becomes ripe black fruit, very well integrated and balsamic contributions from the barrel.
Mouth: Good entry with a mid palate silky and cool , tannin present but friendly, persistent and long.
WINEMAKING
Manual harvest of each of the varieties in small boxes of ten kilograms capacity. Cooling in a cold room until the temperature of the grapes reaches 3 °C. Double selection of bunches and grains, with a soft destemming and crushing. Separate vinification of the four varieties. Gravity vats in French oak vats with no pumping. Cold maceration and individual fermentation of each variety with autochthonous yeasts: 22 days for Tempranillo, 21 for Graciano, 23 for Garnacha and 22 for Mazuelo. It is discovered by gravity in new and second-year French oak barrels for malolactic fermentation.
BREEDING
16 months of stay in these barrels of different cooperages, toasted and origins, without racking. Each of the four wines remains on its lees until bottling and periodic batônnage is carried out during the first months. The cuvée of the wines is made and bottled without filtering or clarifying, so small precipitations of natural origin may appear over time.
