TASTING
Deep purplish color with a very high layer, almost opaque. Intense aromas of ripe black fruits (blackberries, plums) on a large amount of floral aromas (violets), chocolate, menthol. On the palate it is very balanced, with ripe, fresh black fruit and a very long, complex and persistent finish.
WINEMAKING
Manual harvest in small boxes of ten kilograms capacity. Cooling in a cold room until the temperature of the grapes reaches 3 ºC. Double selection of bunches and grains, with a soft destemming and crushing. Separate vinification of the plots El Tablar de Zorraquín and El Cerrado. Gravity vats in French oak vats with no pumping. Cold maceration and fermentation for 22 days with native yeasts. Unveiled by gravity in oak barrels French new and second year to carry out the malolactic fermentation.
BREEDING
18 months of stay in these barrels of different cooperages, toastings and origins, without racking, remaining on its lees until bottling and periodic batônnage being carried out during the first four months. The wine is bottled without filtering or clarifying, so small precipitations of natural origin may appear over time.
