Vivanco Reserva is made from a selection of Vivanco's own vineyards in the Briones terroir of the Rioja Alta, with an average age of 35 years, grown on soils with a marked profile of clay and limestone. Each variety is harvested by hand in small boxes and separately. All the grapes are kept in cold storage for 36 hours before being processed on a double cluster and berry selection table. Harvest began in early October for the Tempranillo variety and in late October for the Graciano.

Elaboration:

Each variety is vinified separately. After a gentle press, the must is gravity-cubed in small French oak vats where it ferments and macerated in contact with the skins at a controlled maximum temperature of 30°C, and is lightly pumped over for 20 days. The malolactic fermentation takes place in small French oak vats. It is aged for 24 months in new and second year French and American oak barrels. The wine is refined for several months in French oak tanks before going on to the bottle rack where it will remain for another 24 months.

Tasting Note:

Intense purple red colour, with a brick edge that denotes its ageing in the barrel. This wine offers aromas of sage and cinnamon, all surrounded by fruity notes of cherry and blackberry and a mineral component. Deep and ripe on the palate, it offers an enveloping, velvety and silky mouthfeel.

Serving and pairing:

Serve at a temperature between 16 and 10°C. Perfect for pairing with all kinds of meats, stews, game dishes, mushrooms, cured and strong cheeses. Ideal to accompany tapas or only with dark chocolate.

Curiosities:

The bottle is inspired by an 18th century original that can be visited at the Vivanco Wine Culture Museum.
