Vivanco Reserva is made from a selection of Vivanco's own vineyards in the Briones terroir of the Rioja Alta, with an average age of 35 years, grown on soils with a marked profile of clay and limestone. Each variety is harvested by hand in small boxes and separately. All the grapes are kept in cold storage for 36 hours before being processed on the selection table. Harvesting began in early October for Tempranillo, and in the middle of the year for Graciano and Maturana Tinta.
Elaboration:
After a gentle pressing, the must is incubated by gravity in small French oak vats where it ferments and macerates in contact with the skins at a controlled maximum temperature of 28 ° C, receiving a slight overpump for 20 days. A malolactic fermentation is carried out in small French oak vats and an aging of 16 months in French (60%) and American (40%) oak barrels, with periodic rackings and a minimum of 6 months in the bottle rack.
Tasting Note:
Bright red colour with light purple edges. Fresh and intense aromas of red fruits, with spicy and liquorice notes, accompanied by elegant toasted and smoked aromas. In the mouth it is fresh and sweet, with an elegant, persistent and very balanced passage through the mouth.
Serving and pairing:
To be served at a temperature between 16 and 10°C. Perfect for pairing with all kinds of meats, stews, game dishes, mushrooms, cured and strong cheeses. Ideal to accompany tapas or only with dark chocolate.
Curiosities:
The bottle is inspired by an 18th century original that can be visited at the Vivanco Wine Culture Museum.
