ELABORATION
Variety: 100% Tinto Fino (Tempranillo).
Manual harvesting in 12 kg boxes.
Double selection, both in the vineyard and in the winery.
Fermentation at a controlled temperature of 20-24 ºC for 9-12 days in stainless steel tanks.
Subsequent maceration for 7-10 days.
Aged for 12-14 months in French oak barrels.
CURIOSITIES
Conde de San Cristóbal winery is located in the historic Pago de Valdestremero, and was erected in the style of the Castilian constructions of the sixteenth century in honour of the first Count of San Cristóbal, "OYDOR" of the Royal Chancery of Valladolid.
The winery bears the title of the de la Mata family, today personified by D. Pelayo de la Mata, IX Count of San Cristóbal.
Conde de San Cristóbal belongs to the Marqués de Vargas group, which also includes the winery with the same name and the Pazo de San Mauro winery.
