The Tomás Postigo winery was founded in 2008, when Tomás Postigo, a chemical researcher and one of the architects of the appellation's consolidation since 1984, decided to make his own wines. As a highlight, it is the first winery to receive the Carbon Footprint, an eco-label that guarantees sustainable and environmentally friendly practices.
In the vineyards of Tomás Postigo , the limestone, sandy-loam soils with stones and pebbles predominate and are arranged at an altitude above sea level of 750 to 1,000 meters. The grapes are harvested at the optimum point of ripeness in small 10 kg boxes and transferred directly to the winery.
In the winery, the grapes go through the manual selection table and the alcoholic fermentation is done with native yeasts. Tomás Postigo 5th year is aged for 12 months in French oak barrels. Thirty different wines are obtained, some of which undergo malolactic fermentation in the barrel. It is then refined in the bottle over a period of 40 years.
Tomás Postigo 5th year is only produced in those exceptional vintages. Elegant, modern and well integrated, they have everything to be a great Ribera de Duero.
Tasting Note
View: Beautiful and intense cherry color, deep and concentrated layer.
Nose: Marked by ripe red and black fruits. Subtle touches of underbrush, especially of rockrose and mineral shades reminiscent of graphite. The very well integrated wood accompanies the fruit with subtle notes of fine pastry and balsamic.
Palate: a fleshy and tasty wine with a lot of life ahead. Ripe and sweet tannin and a bitter point make a very pleasant and long lasting finish. Small percentage of other varieties very well assembled that provide nerves and tension to the Tempranillo.
