TASTING NOTES

Appearance: Golden yellow colour with greenish tones.
Nose: Varietal aromas accompanied by tropical and herbal notes. An outfit wrapped in a subtle smoky tone from working on lees.
Palate: Powerful, fresh, mineral and complex. Full of aromatic sensations with a long and persistent finish.

ELABORATION

100% Sauvignon Blanc variety.
Vendimia manual.
Cold maceration and static cold racking.
Fermentation at a controlled temperature.
Aged in a tank on lees for 4 months with weekly stirring.

CURIOSITIES

Los Astrales, despite only having been producing since the year 2000, is a winery with a more than remarkable experience, that of a family dedicated to the cultivation of vines for three generations, the Romera de la Cruz family, and that of a technical advisor of the stature of Eduardo García (Eduardo is the son of Mariano García, creator of Bodegas Mauro, Maurodos or Aalto).

The latest milestone is the incorporation of José Hidalgo Togores as Technical Director in 2013. José Hidalgo, in addition to being one of the most renowned winemakers in Spain, is the author of the "Treatise on Viticulture and Oenology", the text used in most of the Oenology Schools in Spain and Latin America.
