Tasting Notes:
- Color: Gold, iridescence of old gold, clean and crystalline.
- Nose: Minerals reminiscent of wet soil. Fruity aromas, such as ripe apple, and honeyed, pastry cream and roasted apples. Souvenirs of saltpetre.

Elaboration and Ageing:
Spontaneous fermentation with its autochthonous yeasts and later malolactic fermentation with wild bacteria.
Without addition of sulphurous. Oxidative ageing for 30 months in used oak vats and barrels. Refinement in bottle for a minimum of 6 months before going to market.
