CATA's notes:
- Color Straw yellow with green reflections, clean and bright.
- Nose: concentration of varietal and mineral aromas. Aromas of white fruit stand out intermingled with herbaceous nuances - notes of bay leaf, fennel and low-mountain aromatic plants such as thyme).
- In mouth it is dry, tasty and balanced. Certain bitter touches typical of the Verdejo, round with volume. The natural acidity sustains an elegant and long finish.
Production and Aging: Made with 100% Verdejo grapes from certified organic natural viticulture treated in a special way, seeking a lower yield in order to obtain a higher maturation. Without the use of sulfur or copper in the vineyards. The grapes come from different plots with clay-calcareous soils and boulders in the Rueda area, which are produced separately.
Alcoholic fermentation takes place spontaneously, in stainless steel tanks with wild yeasts. Controlled temperature 18 - 22ºC. Deposits of different capacities, thus being able to separate the various parcels - payments according to the differentiation of structures and soil compositions. Subsequent maturation of the wine in its sediments during a controlled time.
Curiosities: Menade has stood out since its inception for the great character of its whites, short or very short production wines, made with grapes from vineyards with great personality, some with really advanced age vines and among the oldest in Castilla y León.
