Processing and aging:
Since time immemorial in the Bierzo it was known that pieces of land produced the best wines. In one of these places is located Areixola farm, vineyard centennial, formed in glass and planted at high density as dictated by tradition. Vinedo that only admits interventions and manual care. Land in which only the traces of the viticulturist are marked and has never been tamped and compacted by heavy machinery.
The grapes arrive at the winery in small boxes of 12 Kg capacity. Bunch by bunch are picked at the selection table and crushed without destemming. The wine is made in stainless steel tanks with bazuqueos and slight overruns during the fermentation, which lasted for 15 days at 28ºC of temperature. Macero for 20 days more, he bled and was in deposit for two weeks before driving it to aging in new French oak barrels and capacity 225 liters.
