Fermentation in oak barrels at a controlled temperature of 20-22 ºC.
During the first months of barrel aging, the lees are suspended every 15 days.
Total ageing of 12 months.
CURIOSITIES
The Camino de los Maragatos is an old muleteer route that crosses El Bierzo and connects Castile with Galicia. For centuries it was a transport route used by the mule herds of the Maragato muleteers. The Maragatos are mainly known for the transport and trade of fish, they acquired it in several Galician ports and distributed it throughout the towns and cities of Castile and Madrid. The wine of El Bierzo was another of the goods with which they traded, there were muleteers specialized in the wine trade and they transported and sold it from El Bierzo in both directions, Castile and Galicia.
