CATA's notes:
- Color: bright ruby color with violet reflections on the rim. It shows medium intensity in the glass.
- Nose: Intense and complex with aromas of candied red and black fruits. Carefully integrated French barrel that provides hints of licorice, cloves and toasted nuts.
- Mouth: with body and extraordinary acidity; polished and round tannin. Notes of blackcurrant, blueberry, plum, pine and bakery. In turn, it has a soft, balanced and persistent mid palate.
Production and Aging:
Monovarietal from Mencía, It is one of the best expressions of Mencía del Bierzo , from Own vineyards with more than 60 years , planted at 650 meters of altitude in moderate undulations on clay-limestone soils with a slate mantle. The harvest was manual in 15kg boxes. Once the bunches arrived at the winery, they went through the selection table, were destemmed without squeezing and were vatted in 10,000 and 20,000 liter tanks. Fermentation lasted 25 days at 28ºC with natural yeasts, pumping over 3 times a day to achieve greater extraction and concentration. This wine from Bierzo was transferred by gravity to new barrels and used French oak where malolactic fermentation was carried out and its subsequent aging for 9 months . Once bottled, it will still rest for 6 months in the bottle.
