CATA's notes:
Preparation and Aging:
wine area - Campo de Borja
Campo de Borja is a designation of origin located 70 km northwest of Zaragoza, being a transition zone between the Iberian system and the Ebro Valley. The climate is typically continental, which enjoys a pronounced thermal oscillation and influence of the Cierzo. It is a landscape of stony plateaus, which go from lower to higher altitude the further west we are, which allow good water drainage. In Campo de Borja they proclaim themselves the Empire of Grenache, and the wine heritage of the area is rich in this variety, which give complex and structured wines. The vineyards are guarded by the Moncayo massif, omnipresent throughout the region. This Aragonese DO offers us jewels in which Garnacha reaches high levels of splendor.
Curiosities:
The name combines the words stone and gallows in the Aragonese fable. It is inspired by the shape of a fork on a nearby mountain, a tool that is also used to till the land. A red wine made from Grenache with a part of Syrah, faithful to the style of Fernando Mora's wines. Look for delicacy and perfume, above forcefulness and concentration.
The winery - Cuevas De Arom Wineries
New project by Fernando Mora together with his partner from Bodegas Frontonio, Mario López. With the same premises of maximum quality, respect for the land and very non-interventionist preparations in Campo de Borja. With Cuevas de Arom (Arom is Fernando's surname backwards) wines are made in a space where there was formerly a cement warehouse under the Santo Cristo de Ainzón Cooperative. Like old vines, one of the most special characteristics of winemaking in Spain is this cooperative business structure, a system that they are delighted to perpetuate with their new adventure in Campo de Borja and Calatayud.
