The raw shoots - that is, unfiltered - of our fine Gran Barquero have the virtue of showing the veil of flower at its optimal moment of development. This thin film of yeast that covers the surface of the wine gives it an even more intense, harmonious and fresh character.
It is a sensation of sapidity, richness in the mouth, salinity and personality. Extraordinarily versatile, it enhances flavors and sensations of balance and palatability.
Tasting note
Aspect : light yellow. Bright.
Scent : stinging. Intense. Harmonic. Very fresh. Rich in aldehydes. Wood and nuts. Intense flower veil. Yeasts.
Flavor : dry, but somewhat more glyceric than usual. Slightly bitter. Long. Dried fruit (almond). Intense aftertaste and retronasality. The spring crop has a more saline character since it is when the flower veil is at its maximum.
Preparation and aging
Type: dry generous / Fine on the branch.
Variety and origin: 100% Pedro Ximénez grapes from albariza vineyards located in the Sierra de Montilla and Moriles Altos.
Preparation: selection of “yolk” musts, natural fermentation at controlled temperature and without the need for heading.
Aging: organic, under a flower veil. System of criaderas and soleras for a period of 8-10 years in American oak butts. Spring 2020 release. 1/6 of the boots that complete the sole participate in its production.
