CATA's notes:
- View: Old gold, pulling mahogany. Brilliant, with dense and abundant tears.
- Nose: raisined notes of toasted and dried fruit, as it opens up notes of pastries appear. Very frank, with great intensity and nothing alcoholic.
- Mouth: Powerful at first but soft on the palate, with a very good structure and perfect balance between sweetness and bitterness, aftertaste loaded with pastries and toast and a very long finish.
Production and Aging: Type: generous dry / Oloroso. Variety and origin: 100% Pedro Ximénez grapes from the Superior Quality zone of the DO (Sierra de Montilla and Moriles Altos).
Selection of musts; When melted, they are heated to 18º and sprayed in 500/600 L. capacity oak barrels, where they are kept in oxidative aging. Aging: oxidative aging. Criaderas and soleras system for a period of approximately 25 years, in American oak casks.
