TASTING NOTES
- Appearance: Straw yellow.
- Nose: Fresh and mineral, with saline notes and almond and herbal touches.
- Palate: The taste of the apple, mineral notes and elegant acidity are perfectly combined. Fresh and floral finish.
ELABORATION
Variety 100% Palomino Fino.
Grapes fermented with native yeasts.
Aged for 12 months in oak boots under flower veil.
CURIOSITIES
The emergence of organic aging wines in Andalusia occurred in the second half of the eighteenth century, halfway between Sanlúcar (which put the wines) and Cádiz (which put the tabancos of mountaineers in which the beneficial effects of the flower were appreciated).
