Natural fermentation in American oak casks without the addition of yeasts and resting for 6 months on lees.
Biological aging under flower veil for 6 years in fine solera.
Subsequent oxidative aging for 6 more years in the criadera solera of Amontillado dating from 1926.

Bodegas Faustino González is a family business dedicated to the artisanal production of Sherry wines, using traditional methods.
Founded in 1972, when Don Faustino acquired the soleras of 1789, from the Alcázar de Jerez and moved them to the hull of the winery of his wife, Doña Carmen García-Mier, in the area of the Cruz Vieja.
After more than 250 years of history, we are facing one of the most traditional and ancestry relics of Jerez.
This small and beautiful family winery is located in the historic and flamenco neighborhood of San Miguel, in the heart of Jerez.
