Sábalo Barbadillo 100% Palomino Ecológico 2021

Sábalo Barbadillo Ecológico is a white wine of great finesse and delicacy, which perfectly combines the expression of the albariza soil and the creaminess of its slow fermentation. Made from 100% organic Palomino Fina grapes, it combines the Sanlúcar winery's commitment to the land and sustainability. The influence of the sea, the marshes and the Gualquivir is very present in its seal of identity.



TASTING NOTES:

Sight: Clean and bright golden colour.

Nose: Notes of ripe apple and peach, hints of spices.

Mouth: In the mouth it is ample, creamy, light notes of ripe fruit and soft saline nuances.


APPELLATION OF ORIGIN: PGI Cádiz.


WINEMAKING: Made with 100% Palomino Fino variety.


AGEING: Aged for four months on lees.


CURIOSITIES: The grapes come exclusively from two albariza vineyards managed under the organic farming system. One of them is close to the sea in Sanlúcar and is over 35 years old and has been organic for the last 17 years. The other, more inland vineyard, located on a hilltop overlooking the marshes between Sanlúcar and Trebujena, the 25+ year old vineyard has also been certified organic by the CAAE more than 12 years ago.
