Preparation and Aging
At the end of September the harvest begins where the grapes are collected manually in 20 kg boxes with rigorous reception control.
The destemmed grapes are macerated for 6 hours at a temperature of 8ºC.
The must is pressed and immediately racked.
It is fermented in stainless steel tanks for approximately 3 weeks at a low temperature to preserve its characteristic aromas.
The musts of the different varieties are fermented separately and subsequently by tasting.
