Vineyards and Production
Wine made 100% with the Albariño variety from the 70 hectares of the estate's own vineyard. This vintage is characterized by its balance on the palate.
The wall that surrounds the farm also encloses the eleven south-facing estates that make up the 70 hectares of vineyards owned by Bodegas Fillaboa: Monte Alto, Vía, Terneros, Castro, Socalcos, Antigua, Miño, Eucalipto, Río, Carasol and Las Nieves.
The vineyard is planted entirely with the Albariño variety. The slender Albariño vines, trained on trellises and arbors, dot the small estates, forming a puzzle of vineyards. The richness of its soils with good drainage and adequate composition, together with the rainy Atlantic climate, with mild temperatures, make Fillaboa a privileged place for growing vines.
After the manual harvest in Fillaboa, they carry out the destemming process that separates the grain from the stalk to then pass to the pneumatic press where the grains are gently pressed until an excellent quality must is obtained. This must is cooled to 12ºC to carry out later, after a good racking, alcoholic fermentation in stainless steel tanks under strict temperature control that must be maintained between 14 and 18ºC.
This constant temperature control allows Fillaboa to obtain fruity, highly aromatic wines, where the qualities obtained throughout the year are expressed. The structure of the wines will be a faithful reflection of factors such as the soil, the weather, background subscribers and correctors, as well as painstaking care during production and the principles of good grapes, cleanliness and patience.
After fermentation, the musts are subjected to necessary processes such as racking, cold stabilization, filtration and finally bottling.
Curiosities
On the slopes of the historic Fillaboa estate, in the Rías Baixas Denomination of Origin in Galicia, this 100% Albariño wine is born. Its 50 cultivated hectares of vineyards, year after year, are caressed by warm breezes, with a constant mild humidity typical of the Atlantic climate that, together with the good quality of the soil, its "terroir", make Fillaboa the best environment for growing the Albariño grape variety, giving its wines great personality.
