ELABORATION
100% Albariño variety.
Maceration and partial fermentation with the skin.
Spontaneous fermentation with native yeasts at low temperature.
Initial ageing on its fine lees for 9 months in stainless steel, with monthly batonage.
Subsequent ageing for 3 months on lees from the previous vintage and 3 months with the following vintage.
Final maturation of 9 months before bottling.
CURIOSITIES
Eladio Piñeiro was the one who founded Bodegas Mar de Frades in 1983. Due to the fact that he never had the desire to own a large winery, although he did want to make a personal wine, and because his partner suffered a serious ailment, he decided to get rid of those wineries and temporarily separate himself from the wine world until, once these circumstances were overcome, he returned fully to the sector with Adega Eladio Piñeiro.
