CATA's notes:
- COLOUR: Pale yellow with greenish reflections, clean and bright
- NOSE: Fruity aromas with citrus notes of lemon, grapefruit and smoky notes.
- MOUTH: Full with good acidity mineral notes, saline with a pleasant and fresh finish.
Production and Aging: The must is decanted cold. Fermentation takes place in stainless steel tanks at a controlled temperature. As for the aging, it lasts a few months in order to maintain all the freshness and improve minerality.
Curiosities:
The Agly Valley: Terraces on stony soils, with a rich geological background and a climate that man has adopted for his crops. Roussillon was destined to attract the attention of Michel Chapoutier. Black and brown schist to give the wine a solar touch. Gneiss for minerality and freshness. The combination of limestone and chalk for strength and balance.
