Elaboration:
Made from a careful selection of Albarino (70%), Loureiro (15%), Treixadura (10%), Caino blanco and Godello (5%) from the O Rosal area. Manual harvest and in boxes of 20 kg, the grapes are processed in the day. In the vineyard a selection of the grapes is made, which continues in the cellar at the selection table. The fermentation takes place in stainless steel tanks, with controlled temperature and lasts approximately 21 days. After the fermentation, it is carried out a breeding on lees and in the end has been made the coupage.

Founded in 1860, the winery Santiago Ruiz is considered one of the pioneers Of the Rias Baixas Denomination of Origin. Its founder dedicated the last years of his life to his authentic vocation to make wines and was the first to incorporate the then revolutionary stainless steel deposits in the process of vinification in the area. Today her daughter Rosa Ruiz represents the continuity of that spirit in the firm. The winery and its vineyard are located in the region of O Rosal, the southernmost of the five subzones of the D.O. Rias Baixas.
The wine label Santiago Ruiz has a unique and original label. Reproduces a simple map drawn by Isabel, the middle daughter of Santiago Ruiz, to guide the wedding guests on their way. When his father saw him, he liked it so much that he added his name and incorporated it as the label that has been maintained until today.
