Preparation and Aging:
Grapes Grenache, Syrah and Tintilla de Rota , are collected manually from the vineyards of the Sierra de Cádiz and the Serranía de Ronda. In the glass it has a dark cherry color, lively and bright. It is a mixture of Grenache (40%) and Syrah (30%), to which Tintilla de Rota (25%) is added. Aged for 12 months in Allier French oak barrels. Subsequent rest for 12 more months in the bottle.

The Black Papoya What gives its name to this wine and illustrates its label is a native Andalusian goat with whose milk Payoya goat cheese is made in the Sierra de Cádiz and the Serranía de Ronda.
