TASTING NOTES

  • Appearance: Cherry red colour with violet reflections.
  • Nose: Aromas of black fruits accompanied by creamy and sweet nuances from the barrel, along with spicy notes at the end.
  • Palate: Friendly, full and smooth. Complex, showing excellent ripening as a result of the low yield of the old vineyards.

 
ELABORATION

100% Tinta de Toro variety.
Selection of centenary vineyards of limited production.
Maceration for 14 days. Spontaneous fermentation in concrete tanks with native yeasts. Malolactic fermentation also takes place in these tanks.
Aged for 16 months in new French oak barrels.

CURIOSITIES

"Toro was one of the great discoveries of our travels in search of vineyards. In 2005 we found there the largest number of centenary and pre-phylloxera vineyards we had ever seen, with sandy soils perfect for vines and an ideal continental climate to prevent the appearance of diseases. All these conditions had led to the maintenance of an ancestral viticulture, based on respect for natural rhythms.

But, without a doubt, the most special thing we found in Toro were its winegrowers, men and women with an emotional attachment to the land, to which they have dedicated effort, wisdom, respect and sacrifice for generations. That is why they put a face to the wines of Bodega Matsu, a Japanese word that means "to wait" and conveys the philosophy of this project. Waiting for nature to take its course, for the vineyards to be 100 years old, waiting for the perfect moment to open a bottle of wine."
