TASTING NOTES
- Nose: Complex and aromatic.
- Palate: Tasty, elegant, with a creamy bubble and a lingering finish.
ELABORATION
Varieties: Zurieles, Verdejo Serrano, Bastardo Blanco, Folgasao, Hebén, Chardonnay, Cayetana, Doña Blanca, Beba, Alarije, Colombard and Cigüentes.
Malolactic fermentation is not completed for maximum freshness.
Aged for 36 months on its lees in the bottle using the "champanoise" method.
CURIOSITIES
Encina Blanca is a winery that produces genuine wines in Extremadura through controlled vinifications of small volumes. The small tanks allow them to ferment each plot separately, picking the grapes at their optimum point of ripeness, depending on terroir and variety.
