Elaboration:
The Syrah grape comes from vines of more than 25 years old, located at the threshold of the Natural Park of Foix, in Castellet i la Gornal. Coming from organic farming, and with careful soil management, the winery achieves little grape production, which makes the concentration of aromas and colour exceptional, and a very important thing, perhaps the most important, that allows the skin to reach its optimum point of maturation. Grape harvested at dawn and immediately transported to the winery. It then skids and puts it with the skins in the fermentation tanks.
