Elaboration and ageing:
The Parellada grape variety is used to make this wine. It is the later grape in the maturation of the three native varieties of the Penedés. Harvesting took place at the end of September. It comes from the highest vineyards in the Designation: Pla de Manlleu, Pontons , Can Ferrer and Aigua Viva. It is vinified by fermenting at low temperatures, using only the flower must and the must resulting from a very gentle pressing. The same yeasts are used for the first and second fermentation, with the function of achieving a complete metabolism of the sugars and a delicate and integrated needle (pressure of 1.5 bar).
Organic and biodynamic viticulture
Based on careful observation and treatment of the factors that influence the land and its habitat. They do not apply chemical herbicides or pesticides, they use natural resources with the main objective of preserving the balance of the environment and maintaining spontaneous plant cover to achieve fluffy soils.
