Elaboration and aging:

For the elaboration of this wine the grape variety Parellada is used. It is the later grape in the maturation of the three autochthonous varieties of Penedes. The harvest was made at the end of September. It comes from the highest vineyards in the Denomination: Pla de Manlleu, Pontons, Can Ferrer and Aigua Viva. It is vinified fermenting at low temperatures, using only the must flower and the must resulting from a very soft pressing. The same yeasts are used for the first and second fermentation, with the function of achieving a complete metabolism of the sugars and a delicate and integrated needle (pressure of 1.5 bar).

Ecological and biodynamic viticulture
Based on the meticulous observation and treatment of the factors that influence the land and its habitat. They do not apply chemical herbicides or pesticides, they use natural resources with the main objective of preserving the balance of the environment and maintaining spontaneous plant coverings to obtain spongy soils. Through biodynamics, a step beyond the ecology, they vivify the
vinas and seek to raise the levels of biodiversity: they apply infusions and decoctions of plants to avoid pests, and they elaborate their own animal and vegetable compost, and the preparations of their own farm.
