TASTING:
Bright gold in color.
Powerful multifloral and multifruit aromas, with fragrances of aromatic herbs, raisins, figs, peaches, apricots, dried apricots and honey, giving sweet, acidic and bitter motifs, on a background of new wood, which provokes vanilla tones.
In the mouth it is exceptional, taking the muscat grape to its majesty, with the complexity that the brotytis gives it.
PREPARATION AND AGEING:
The climate in which the bunches ripen is the typical continental Mediterranean of the Ebro Valley. Arid, sunny, where a long-cycle variety such as Moscatel ripens to perfection and is very favorable to stopping the over-ripening process.
The production process begins with a manual and staggered harvest in which only bunches are cut at their optimal point of overripeness, leaving the rest for the next selection. The objective is to obtain grapes with a high concentration of sugar and adequate acidity. Once in the winery, the grapes are pressed to obtain a dense must that passes into French oak barrels where it partially ferments, leaving a high content of residual sugars. It is then kept on its own lees for about 9 months.
CURIOSITIES:
Founded in 1647, it is one of the dynasties with the longest history in Spain. Eleven generations of Chivites have passed on the baton of wine tradition. During this time, the Chivite house has grown, has adapted to the new demands of the market and the consumer and has created a brand that today is synonymous with maturity, elegance and know-how.
