When it opens, the wild sensations are enlivened, low forest, juniper and cedar wood, spicy notes of pepper, orange and an aroma of black plums combined with blueberries.
- Its passage through the mouth is expressed in a powerful, well-structured way, reflecting the black fruit intermingled with cloves. Tasty, good quality tannins, with a long-lasting finish and an elegant profile that is recognized as a high-end wine.
It has been made exclusively with the best grapes Tempranillo
of the harvest of the Farm of Legardeta
, harvested and selected twice by hand, in hours of low sunlight to avoid pre-fermentation before reaching the winery. Before pouring the Tempranillo grapes into the hopper, they go through a selection belt. It is destemmed and lightly squeezed to allow the must to macerate at 12ºC before starting the fermentation in stainless steel tanks with cold jackets, to control the temperature between 23-25ºC. It ferments for approximately 10 days, at the end it is uncovered and malolactic fermentation is carried out in barrels. stays for 14 months in new French Allier oak barrels, 60% new and 40% second wine
