Vineyards located in San Martín de Unx (Navarra), at an altitude of more than 600 metres. Vineyards worked by means of a viticulture integrated with the environment. Clayey-calcareous soils. The climate allowed a long harvest that positively favoured the quality of the 2016 harvest. Average yield of 4,000 kilograms per hectare. Manual harvest in 15 kg boxes. Cluster and berry selection. It is done after a viticulture process of maximum respect for the environment and with the absence of pesticides and herbicides. Integrated viticulture.
Vinification:
Vinification in open tanks with cold maceration for 48 hours and fermentation for 10-12 days with two treads per day and small pumping over. Malolactic fermentation in barrels.
Ageing for 12 months in 500 litre French oak barrels. Bottled in July 2019.
