Tasting Notes:
- Cherry-cherry color, dense tear.
- In very complex nose, with many different notes: flowers, toasted, red fruit, some black fruit also ... some spicy touches, spice, some incense even.
- In the mouth the tannins are still a little polished, but it has a great body and a good passage through the mouth. Great attack, very good structure and fairly balanced: ripe red and black fruit with spicy notes and great finish.
Elaboration and Aging
72.5% Fine, 21.5% Cabernet Sauvignon, 4.5% Syrah, 1% Malbec, 0.5% Merlot, Quinta Sardonia has a aging of 20 months in new French oak barrels and single use only. Clarification is performed with egg white and a light filtration before bottling.
Harvesting is one of the key points of the process. The same payment can be harvested up to three different times to ensure that the grapes arrive at the winery at its optimum. Once the fruit has been collected in small boxes, a double selection is made, first of bunches and then grains and by means of a crane bridge grapes are introduced by gravity in the deposits, where they autofermentan with their own autochthonous yeasts, with Remarkable results at the aromatic level.
Curiosities
In 2002 I joined as an advisor Peter Sisseck , The soul of Pingus, and from his hand came Jerôme Bougnaud , "Hacienda Monasterio" to take care of both oenology and vineyards, located in a unique farm located in Sardon de Duero (Valladolid), at the gates of the Ribera del Duero and just 400 meters from the river bed.
What is Biodynamics?
Ecology limit. Biodynamics is the practice of ecological agriculture elevated to the maximum expression. The main idea behind this trend is that the human being has to ensure subsistence without dilapidating the resources offered by nature, especially non-renewable, seeking the balance of the ecosystem, biological diversity and recovery of bacterial activity in the floor. In addition, they argue that the positions of the planets and the cycles of the moon also have an influence on the life of plants,
Aging: 17 months in French oak barrels.
