ELABORATION AND AGEING:
The must fermented with the native yeasts themselves in 228-litre Burgundian-style barrels. Subsequently, the wine remained without racking in French oak barrels, where it completed a 10-month aging on its lees, with periodic caning. It was bottled in the summer of 2020.
