Production and aging:

The grapes are harvested manually, with extreme care. At the winery, we try to intervene as little as possible so as not to interfere with the benefits that the vineyard itself offers. Fermentation is carried out with wild yeasts and, after the alcoholic one, malolactic fermentation develops spontaneously in order to give volume and smoothness to the wine. Sulfur is not used at any time during the manufacturing process.
