Txacolí de Getaria: A quality wine
As a result of the recovery and quality efforts carried out jointly by the harvesters and the Basque administration, in 1989 the Txakoli de Getaria was recognised as a Designation of Origin under the name of Getariako Txakolina. And in 2007 the Getariako Txakolina Designation was extended to the entire historical territory of Gipuzkoa.
From its headquarters in Getaria, the Regulatory Council of the Designation of Origin ensures that the origin of the native grapes, their careful processing and quality control, come together to offer the consumer the guarantee of Getaria Txakoli.
Txakoli de Getaria is a young, fruity white wine. It has a moderate alcohol content (9.5º - 11.5º) and a slight acidity. It is a very characteristic and differentiated wine. It must be served fresh, and together with small needles of carbonic acid, the result of its peculiar elaboration, it gives off its full range of aromas.
We recommend trying it with salted anchovies and bonito in oil, with which we, the harvesters of Txakoli de Getaria, offer it to you, if you visit us in one of our wineries.
Two native varieties, the Hondarrabi Zuri, which accounts for 95% of the vineyard, and the Hondarrabi Beltza, the remaining 5%, are the vines that, grown in trellises and on the expaldera, produce the grapes with which Txakoli de Getaria is made.
Careful harvests at the beginning of autumn, seeking a balance of sugars and acidity, together with a careful elaboration in virgin olive oil, with the most modern pressing and fermentation technologies produce the Txakolí de Getaria.
Vineyard. In winter, when the vineyard is at rest, pruning is carried out with the aim of leaving the productive shoots whose buds, in spring, will sprout and develop the future bunches. The harvest takes place at the end of September or beginning of October when the bunches have reached their optimum point of ripeness and balance between sugars and acidity.
Wine cellar. During the harvest, the grapes arrive directly from the vineyard to the winery and this is where the winemaking process begins. After the delicate pressing of the bunches, the must obtained ferments at a controlled temperature for 15/30 days, transforming into Txakoli. A few months of rest in the cellar and the Txakoli de Getaria will be ready to be tasted and then bottled.
It is a semi-dry white that stands out for its intensity and freshness. Crystalline white colour with emerald green glints. Intense aromas of tropical fruits such as pineapple, passion fruit, banana, lemon, melon. It has an exotic, refreshing, delicious taste, with citrus notes. It has frizzante style bubbles that exalt the freshness of the wine.
