TASTING NOTES
- Appearance: Medium-high cherry colour.
- Nose: Aromas of wild fruits, with notes of orange peel, graphite and balsamic and woody touches.
- Palate: Complex, round and balanced. Long and persistent finish.
ELABORATION
100% Grenache variety.
Harvested by hand in boxes with subsequent selection at the table.
After selection and destemming, the grapes are vatted where they wait until fermentation starts naturally with the native yeasts without corrections or additives.
It is devatted in new European oak barrels, where it undergoes malolactic fermentation on lees for 18 months.
The wine is then rounded in 1450 litre foudres for 5 months until bottling.

Viñedos de San Martín is a company founded in 2001, dedicated to the maintenance and exploitation of the vineyard, production, ageing and marketing of the product in Pagos de los Castillejos de San Martín de Valdeiglesias, belonging to the D.O. Vinos de Madrid. This project is committed to the oldest tradition in the area, recovering vineyards rooted in the area but as a commitment to the future of this land, maintaining the balance between the traditional production of our wines, but without renouncing the advantages offered by modern technology to oenology.
