Elaboration and Aging:
Made with grapes harvested from vineyards more than 30 years old planted on the estate from which it receives its name (Las Gravas). A vineyard of 22 hectares that is characterized by its soils of pebbles and stones and its continental climate softened by the Mediterranean influence. After the harvest, the fruit is not destemmed or squeezed. Each grape variety ferments independently in underground presses at a controlled temperature of around 29ºC. The resulting wine is aged for 18 months in oak fudres until it is assembled and bottled (without any filtering).
Casa Castillo is located in the altiplano of Jumilla. Its lands occupy the shady area of the Sierra del Molar, rising on steep slopes to 760 meters of altitude. The estate has an area of 402 hectares of which only 150 are dedicated to the vineyard, the rest is devoted to the cultivation of almonds, olives and the conservation of mountains and pine forests. The autochthonous variety Monastrell occupies 80% of the vineyard, followed by 12% Garnacha and 8% Syrah.
