Tasting note:
Color: Very intense cherry red color, with mauve iridescence on the edge of the glass.
Nose: Aromas of very ripe fruit compotes but with a predominance of gindas and blackberry bombons, together with a certain touch of coffee and titamisu.
Mouth: You notice mainly those coffee and chocolate tones.
Processing and aging:
Night harvest, selection of grapes in the field and on arrival at the winery, brewing by gravity, maceration in cold for 10 days and alcoholic fermentation at 15 ºC. Use of the "delestage" technique to increase the extraction of color. Aged for 11 months in new 500 liter French Allier oak barrels.

Curiosities:
This wine is made in Villafranca de los Barros, in a new winery called Pago de las Encomiendas. It is a winery designed for the production of quality wines, and although it does not have the grandiosity of other enological projects that are currently being presented in Extremadura, a huge future is predicted.
