Cava Rocamador is a sparkling wine made from Macabeo and Chardonnay grapes. Harvested by hand, the grapes were harvested in boxes of less than 20 kilos to ensure that the grapes arrived at the winery in perfect condition. When it is time to extract the must, the grapes are pressed completely whole and then fermented at low temperatures in small tanks.
