Elaboration and aging:
- Color: intense cherry red with violet tones and high layer
- Nose: Predominant aromas of ripe black and red fruits, in addition to licorice and a subtle and well integrated wood
- Mouth : Meaty and structured, with a step of mouth at the same time robust and velvety.
The two varieties were harvested by hand. Each variety ferments separately at a constant temperature of 28ºC, with a maceration of 15 days for Tempranillo and 18 for Cabernet. The malolactic fermentation proceeded to the coupage and step to New American oak barrels for a period of 10 months . At the end of the aging period, it was clarified with egg albumin and bottled, remaining in the bottle rack 18 months before going on the market .
He Tempranillo for the elaboration of this wine comes from a careful selection of plots of old vineyard of the Matanegra region, cultivated in a glass at an altitude of 630 m. and harvested on September 25 and 26.
He Cabernet Sauvignon comes from a small vineyard cultivated in espalier, from which the sector was selected with fewer bunches per vine and a higher concentration of tannins and anthocyanins in them. It was harvested on October 2 and 3.
When in the year 25 a.C. Emperor Octavius Augustus ordered to found the city of Emerita Augusta for solace and enjoy the veterans of the Legion V "Alaude", the Roman soldiers brought to our land their passion for the vine and the wine.
More than 2000 years later, BODEGAS ALAUDE pays homage to those legionaries and, starting from the wine tradition of our land promoted by them, has developed a new concept in winemaking.
