The grapes used in the production of Haus Klosterberg Riesling come from different vineyards owned by Markus Molitor, composed mainly of slate soils. These vineyards produce fresh wines and minerals.
The 100% healthy grapes are gently pressed and macerated for several hours with their aromatic skins.
After maceration, the juice is fermented by natural yeasts in stainless steel tanks and large wooden barrels. Fermentation is followed by ageing on lees, which produces a fruity and well-balanced wine.
