ELABORATION

Variety: 100% Mencía.
Manual harvesting in 15 kg boxes.
Maceration for 48 hours prior to alcoholic fermentation.
Fermentation in small stainless steel tanks.
Aged for 10 months in 500-litre French oak barrels.
