Elaboration and Aging
Pago Florentino is the name of the fifth payment of Castilla La Mancha, denomination that got the year 2009. It is a Payment Wine Made with the variety Cencibel Coming from Finca La Solana (Malagon, Ciudad Real), which is characterized by its extreme climatology. They are vinified under the direction of Florentino Arzuaga, Producer of Arzuaga, in the Ribera del Duero . Aging: 12 months in French oak barrels.

The DOP Pago Florentino Was conceived in 2009, for its unique characteristics, within the Wines of Castilla-La Mancha. In 1997, Florentino Arzuaga lands in Toledo attracted by the world of oil, in particular by the variety of the olive Cornicabra that in the area of Montes de Toledo reaches its maximum expression. After the acquisition of 150 hectares of olive trees of this variety began the elaboration of oil. Looking for new lands to give greater character and personality to the oil, I came to where I found some terenes suitable for planting, but not of olive trees but of vina.
