Production and aging:
This wine is a blend of Cabernet Sauvignon and Merlot in equal parts, from vineyards grown at an altitude of about 600 meters in the Enate Valley. The low levels of humidity in the area allow respectful viticulture to be applied, because the vines do not need excessive treatments. The grapes are destemmed and then cold macerated. The fermentation of the must is carried out at a controlled temperature.
The aging is 6 months in French and American oak barrels.
Curiosities:
With a continental Mediterranean climate and low annual rainfall, the Somontano soils are characterized by being limestone and stony, with the presence of gypsum in some cases, and a sandy-loam texture. In addition, the great thermal difference that exists between day and night in summers contributes to a slow and optimal ripening of the grapes. Thus, the climate of contrasts , the soils of loamy-sandy textures of exceptional quality and the pure water from the melting of the Pyrenees make Somontano a unique environment for growing vines.
