Tasting notes:

Clean and bright cherry color, with intense floral aroma and red fruit forest, assembled with light spicy touches. The palate is broad, fresh, persistent and velvety.

Development and aging

Made from 100% Tempranillo grapes selected from vineyards plots Sta. Gadea. Clayey-calcareous soil, very poor in fertility and low production. After a short pre-fermentation cold for 6 days below 12 ° C, controlled alcoholic fermentation starts with selected yeasts.
Fermentation in stainless steel tanks and two daily pumping density and temperature controls. At the end of the malolactic fermentation starts without addition of bacteria, tempering the cellar at 22 ° C for 24 days. It is racked by separating the lees unfiltered clarify. The wine was aged in French oak barrels of 300 liters for 5 months.
