Elaborated basically with Tempranillo grapes and some other varieties such as albillo, grenache or bobal, all cultivated under ecological principles. The clusters of grapes without destemming of vines between 35 and 60 years old are stepped on with their feet, undergo a long maceration and ferment all together, respecting the ancestral traditions. Afterwards, they carry out the malolactic fermentation and the subsequent aging of 19 months in oak barrels. Curiosities:
Dominio del Aguila is a winery of Jorge Monzon,
who together with his wife Isabel Rodero
They make different wines. After passing through France (la Romanee Conti) he returned to the Ribera del Duero where he agreed with a new perspective of Nacho Arzuaga
for the wines of the winery and meanwhile I was buying plots with old vines in glass (it is important that the vines remain in glass) that took care of and sold the grapes to the best of the place. A small winery that makes some of the great wines of the area. Each strain is taken care of so that it expresses the land where it grows, including white strains that enter, and the elaboration is taken care of so that nothing is false, "It does not even have a destemmer" He says Luis Gutierrez (The Wine Advocate - taster of Robert Parker) from the winery that declares as "The smallest in the world" .
